| Enchilada Pie and Healthy Nacho Cheese |

ENCHILADA PIE
15 corn tortillas
1 recipe HEALTHY NACHO CHEESE (recipe below) 4 cups vegetarian chili
Making layers in an oiled spray 9 x 13 baking pan,
starting with layer of 5 corn tortillas, then a layer of vegetarian
chili and a layer of the "Healthy Nacho Cheese." Continue in the same
order for three layers. Bake at 350 degrees for 30 minutes. They are
delicious!
1/4 cup raw cashews
4 oz. jar pimento 1 T lemon juice 3 T nutritional yeast flakes 1 tsp onion powder 1/2 tsp garlic powder 1/4 cup cornstarch 1 1/4 tsp sea salt 2 1/2 cups water
Bring 1 1/2 cups of the water to a boil in a saucepan.
Liquefy the remaining ingredients including 1 cup of water in blender.
Pour blended mixture into boiling water and continue cooking until
thick. Serve over enchiladas, broccoli, pasta, baked potato, brown
rice, toast, nacho chips, or anything you would use cheese for.
