RED BEAN POCKET BREAD
FILLING:
2 cups cooked red beans, drained
1/4 tsp sea salt
1/2 c honey or turbinado sugar
DOUGH:
1 cup whole wheat flour
1 cup unbleached white flour
1/4 cup lecithin granules
1/2 tsp sea salt
1 T soy milk powder
1/4 cup canola oil or olive oil
3/4 cup hot water
FILLINGS: Run all ingredients through a food processor until smooth. Set it aside.
DOUGH: Mix whole wheat flour, unbleached white flour, lecithin
granules, sea salt, and soy milk powder in a bowl. Gradually add hot
water and oil. Mix them well. Divide into 20 balls. Flatten and shape
into 3" size circles. Put a tablespoon of
the red bean mixture in the middle of the dough. Close and flatten into 3" size circle. Cook in a
medium heat non-stick pan until brown on both sides. Delicious!
